Katz previously worked as a meteorologist for WGNO-TV, an ABC station in New Orleans. Bruce worked as a meteorologist for a while before being elevated to chief meteorologist. He was at the station from January 1996 until November 2012, providing news at 5, 6, and 10 p.m. The Associated Press and the Press Club of New Orleans nominated him for Best Weathercast.

Before joining WGNO-TV, he worked at WBRZ TV, an ABC affiliate in Baton Rouge, Louisiana. Katz worked for WBRZ TV as a noon and morning weather reporter, providing weather updates from 5 to 7 a.m. He worked at the station for six years and two months, from November 1989 to December 1995. Bruce formerly worked for KLAX-TV in Alexandria as a chief meteorologist for 18 months. His broadcasting career began with KATC-TV in Lafayette, where he worked as a weekend meteorologist
