Ingredients:
Crust
1 ½ cups almond flour
1 teaspoon cinnamon
3 tablespoons low-carb sugar substitute
1/2 cup of macadamia nuts
Filling
32 ounces of cream cheese or four 8-ounce blocks
¾ cup low-card sugar substitute
½ can coconut cream 13.5-ounce size
3 large eggs
1 teaspoon vanilla extract or coconut extract
Icing
½ can coconut cream (13.5 ounce size)
¼ cup Truvia confectioners sugar
2 tablespoons cream cheese softened
Topping
1/2 cup of toasted coconut
1/2 cup of toasted macadamia nuts
Instructions:
1. Combine the ingredients for the crust, then press the mixture onto the bottom of a 9-inch springform pan. While preparing the filling, refrigerate.
2. Combine the filling ingredients in a big basin. Blend until uniform. (Note: The lumpiness is from the sugar replacement. The finished product will be slick).
3. Spoon the contents into the crust and bake for 15 minutes at 350°F. Bake for a further 75–90 minutes at 250°F with the heat reduced.
4. Give the food two hours in the fridge to chill. Remove the springform side by running a knife down the cake’s edge.
5. To make the frosting, combine the cream cheese, powdered sugar, and coconut cream and mix until smooth.
6. Frost the cake after it has cooled. Slice after being chilled for at least one hour.
7. Scatter some toasted coconut and macadamia nuts on top of the cheesecake for extra color and coconut taste.
